Job Description

Our client is in the airlne catering indutry and they are currently looking fora Sous Chef for their new client to focus on Chine cuisine. the incumbentis responsible for ensuring that cooking is as per the menu specifications.

Candidate Qualifications

- Monitor menu and recipe utilization and ensure that cooking is as per the menu specification. - Plan and allocate work to team members by using planning tools, ensuring on time delivery to internal and external customers whilst maximizing productivity - Manage the daily usage of labour, adjusting the daily plan to ensure flights are covered effectively at minimum cost - Accurately completing relevant documentation i.e. compliance/substitution/waste/service reports within required timescale. - Ensuring any material or product costs are fully managed - Managing team members on a daily basis allocating tasks fairly - Creating and maintaining a positive, safe and productive working environment - Identifying employee training requirements including mandatory regulatory training and communicating them to the Executive Chef/ Production Manager - Taking a proactive approach in ensuring employee issues are identified and managed - Proactively manage team member?s performance - Managing resources to ensure that Company and LHI quality targets are achieved whilst operating within productivity targets - Ensuring all documentation is correctly completed including the verification of physical HACCP documentation and by conducting regular spot checks - Maintaining housekeeping standards and ensure reduction of waste - Manage daily operations in accordance with company health and safety policies and procedures - Identifying and eliminating, isolating or minimizing workplace hazards - Ensure investigations into accidents and incidents are completed effectively and there is follow up on corrective actions - Ensure regular and effective communication with team members - To continually review ways of improving the operation, generating new ideas and actively implementing and promoting change

Candidate Skills

- 3 years cookery degree or equivalent qualification - 3 years professional cookery experience - Experience within a fast moving and changing work environment such as FMCG, manufacturing or industrial catering - Must have experience in leading a team of employees - Good track record with respect to managing high profile customers/ clients - Relevant tertiary qualification - Ability to manage targets - Good understanding of Health, Safety, and Environmental issues as well as HACCP - Good verbal and written communication skills - Good knowledge of Microsoft office is essential - Ability to solve problems, generate solutions and make justified decisions that influence key stakeholders - Drivers license and own transport
